The Vine inn in Nurioopta is on the hunt for a professional and experienced Hed chef to lead their very bust kicthen operations
Responsibilities include:
• Lead employees by setting a positive example. Instruct, train and develop apprentices and other kitchen employees.
• Implement and maintain programs to ensure high standards of cleanliness, storage and organisation within the kitchen at all times.
Ensure adequate supplies of food stock and required items are available for service.
Order and reconcile all items and purchase order receipts.
Ensure effective stock rotation
Cooking and service of food according to the venues quality and service standards by chefs, cooks, apprentices and kitchen hands
Organising and rostering of kitchen staff
Food costs meeting and exceeding agreed targets
Menu and operational planning
Undertake regular stock takes and report anomalies to Management.
Supervise all members of the kitchen team according to staffing guidelines in accordance with the Crew Handbook.
• Liase with Restaurant employees regarding the availability of menu items, additions to the menu and any relevant changes.
• Delegate duties and responsibilities to kitchen employees to ensure service demands are met.
Maintain excellent presentation standards and cost controls for all food outlets.
Ensure that kitchen staff follow hygienic food handling practices.
Organise and implement regular cleaning and waste disposal.
Participate in scheduled training and development programs provided by the hotel to improve self and departmental standards and to attend departmental meetings as required.
Report to the CEO regularly on kitchen related activities.
Plan and implement menu changes in consultation with Management.
